The English Whisky Co Bottling's

The English Whisky Co. was established  in 2005 by James and Andrew Nelstop, as one of the first and for the time being the only registered whisky distilling company in England.

Others are in planning stages one other failed and a Cornish Brewery produces a whisky in batches

Their objective is to produce excellent quality whisky that will be able to compete with some of the finest whiskies currently on the market. Aiming to use the very best local ingredients, giving a selection of unique and truly excellent whisky.

The distillery produced its first 'run' on 12th December 2006 and it was with much excitement and with an enormous sense of achievement that the first barrel of 'St. George's whisky' was filled and along with the rest of the run, was put away for 3 years to mature.

Norfolks warmer climate allows a more rapid maturation of the whisky.

I have collated the English Whisky Co bottlings so that it is easier to see what has been produced.

Zuidam Millstone Dutch Single Malt Whisky Page Added

Fred van Zuidam founded the distillery in 1975 with the intention of creating a small distillery that only produced very exclusive quality product range, This distillery occupied only 300 square metres consisting of 1 small still and a single production line.

Distillery Production Methods
Traditional Dutch Windmills mill the malted barley that is used to produce Zuidam Malt Whisky. By using this method for milling for their malted barley the distillery helps preserve the important Dutch heritage of the world famous windmills. Even more importantly the traditional millstones of the windmills slowly grind the malted barley into flour. This traditional way of milling causes almost no increase in the temperature of the grain and thus helps preserve the wonderful aroma’s available from the malt.

Het Anker Distillery

Leclef Charles (fifth generation Van Breedam) was raised in the Mechelen Brewery. He had a close relationship with his Uncle Michel Van Breedam at Molenberg - Blaasveld where he had preserved the original authenticity of the brewery

In 1990 Charles took over his Uncles Brewery and brought with him a vision of a modernised brewery. After a period of "co-operation" with Riva and John Martin, he decided in 1998 to give new impetus to the brewery. The buildings where restored with major investments to renovate the production equipment and expand the capacity with new beers such as Cuvée van de Keizer, Gouden Carolus Ambrio the Gouden Carolus Hopsinjoor, Gouden Carolus Tripel.

This expansion developed further in 2003 towards distilling, however not traditional Dutch gin as in the previous century, but whiskey. In particular a fine single malt whiskey based on the spirit of Gouden Carolus Tripel beer!

DYC (Spanish Whiskey)

The Distilleries
Palazuelos de Eresma (Segovia) Distillery is located in a privileged setting, bordering the river Eresma, famous for the excellent quality of its waters, which run on granitic soils. In addition, the Community of Castilla y Leon has an excellent reputation for producing barley. At the Palazuelos space was insufficient so the blending and bottling was transferred to Valverde del Majano (Segovia) where there is also Anise Castellana.

The DYC Distilleries carry out the main production processes - distilling both Malt and grain together, which is unusual, since even in Scotland the two types of distillation are normally at a different locations (except for Loch Lomand).

They also, have an on-site Malt House for the germination of barley which is converted into malt. This process is now almost unique in a distillery, and today there are only 4 distilleries in Scotland that have a Malt House in use.

Oerbaek-bryggeri Isle of Fionia Danish Whisky

ISLE of FIONIA Single malt whiskey

It is not from the Scottish islands, but on the island of Fyn (Fionia) that the old Ørbæk Brewers have thrown themselves into the production of o
rganic whiskey, from one of the first micro-distillerys in Denmark.

Isle of Fionia is the name of the new Danish Whisky and refers to the original ancient name for the island of Funen.

At Ørbæk Brewers they have installed a modern hand forged copper still with a capacity of 1000 litres. The 100 year old brewery buildings is the setting
for the processing of malting, distilling and storing whiskey in oak barrels.

The distillery has a patented column still which burns some of the cleanest and fine spirits.

Penderyn Single Malt Welsh Whisky 46% abv Madeira Finished

(Well it is St Davids Day)
The Penderyn Distillery is found in the picturesque village of Penderyn in the southern reaches of the scenic splendor of the Brecon Beacons National Park. The area has spectacular mountain scenery, open moorland and valleys containing fast-flowing streams, rivers and waterfalls.

The famous and popular Scwyd-Yr-Eira waterfall is within walking distance of the distillery.  All distillation, maturation and (unusually) bottling are carried out on the company's premises; enabling close quality control to be applied to all stages of the process.

Penderyn Single Malt Welsh Whisky   46% abv Madeira Finished Tasting notes:

This whisky is ‘finished’ in Madeira casks to impart a generous flavour of subtle complexity and gentle moreishness.  The unique distillation process at Penderyn produces a single malt whisky that is supremely smooth, light in character, softly golden in colour and does not require chill filtering.

At a premium strength of 46% abv, Penderyn has an exceptionally balanced taste and the aroma is of cream, toffee and fleetingly of fresh new leather.  Then, as the initial sensations fade, the finishing notes of tropical fruits, raisins and vanilla emerge strongly and are long lasting.

Stauning Single Malt Danish Whisky

Stauning Single Malt Danish Whisky added to www.whiskymerchants.co.uk

The story of Stauning Whiskey started during a weekend in May 2005 a group of nine friends were enjoying a glass or two of Scotch single malt whisky, and wondering why no whiskey was made in Denmark.

All the conditions are present. The climate, malting and well water. This discussion was replaced by curiosity. They decided that they simply had to try to create a Danish single malt whiskey.

At a former butchers the group had some rooms available. However they needed some time to get them restored and approved by the Danish Food Agency to produce whiskey.

TAX ( Danish Agency) was contacted to have the various applications approved, as there was a wide range of authorities to be contacted before whiskey production could commence

When the permits were in place, they could finally buy the essential equipment - copper pot stills are not exactly a standard item, so they ended up getting two custom-hand-made pot stills from Spain and shipping them to Denmark. One wash still 400 litres and a spirit still 200 litres.

Whilst waiting for the sills to be delivered they resolved the other production problems of, malting the barley, drying oven, mashing, fermentation, etc.
