Highland Park Single Malt Whisky 11 year old 50%


Orkney Island.

Located on the southern edge of the town of Kirkwall Highland Park s the most northerly distillery in the Scotland.

The distillery still cuts its own peat, which it uses in its traditional floor malting of the barley on its premises.

Nose : Fresh and sweet and citric with a hint of peat.

Palate : Starts fresh/salty/sweet - develops rich/smokey.

Finish : With orange rind, oak notes and dry ashes. (J)

Tasting notes :-

Nose : Honeyed, vanilla and nutty with late creaminess.

Palate : Soft, creamy, sweet, nutty and citric.

Finish : Very creamy, warming to a rich orangey flavours. (F&S)

Talisker Single Malt Whisky 1993 Double Matured 45.8%,


Founded in 1830 by Hugh and Kenneth MacAskill
Location Island region Carbost on the isle of Skye
Water Source Springs on Cnoc nan Speireag (Hawk Hill)

Like all CLASSIC MALT Distillers Editions, this Talisker has been double-matured in a second cask after the original maturation period (in this case in an Amoroso Sherry cask). The experience is older, sweeter and richer than the regular bottlings. This Edition has a very special bitter-sweet harmony where the peat softens on the palate to a rich, sweet, juicy fruit finish.

 
Strength: 45.8% ABV
Appearance: Chestnut brown

Palate: Crisp peat at first then softens to enormous richness in the mouth. There's sweet, roasty malt with a heathery dryness. The sherry notes keep back some of Talisker's usual pepper. In its place is luscious, slightly oily sweetness - with ripe, juicy fruit and vanilla.

Finish: Some very deep cocoa notes, vanilla and lingering quite earthy peat. An enormously chewable single malt, with sweetness having the edge on dryness

Craigellachie Single Malt Scotch Whisky 1989

Colour: Bright amber
Neat
Nose: Sweet, fruity and herbal aromas - apple skins with hints of mint and menthol. Some sherry wood notes also present.
Palate: Sweet initially followed by a burst of peat smoke and charred oak. A sweet, malty note and a trace of sherry.

With Water
Nose: More herbal, grassy notes evident with a rich, mulled fruit element. A touch of smokiness on the edge.
Palate: Smoky with sweet spicy flavours - cinnamon and
aniseed. A touch of sherried fruitiness.
Body: Medium.
Finish: Sweet - sherry and dark chocolate.
Cask Type: Refill Sherry Hogsheads.
Whisky Style: A pleasant dramming Whisky.

Deanston Single Malt Scotch Whisky


Founded as a distillery in 1965-66 by the Deanston Distillery Co Ltd,
Location Highland Region Midlands district Dourne
Water source River Teith

In 1972 the distillery was purchased by Invergordon Distillers and prospered during the 1970s boom, producing a blend and a malt called "Old Bannockburn" The distillery closed during 1982 at the time of the great whisky lake.

Burn Stewart Distillers purchased Deanston in 1990 and have won export achievement and company-turnaround awards. For their efforts an interesting feature is the use of water-powered turbines as the energy source, something that was a familiar sight to those working Scotland’s distilleries a century ago.
 
The Deanston distillery has two pairs of stills with quite narrow necks with ball-shaped bulges, the Lyne arms slope slightly upwards and are arranged to encourage a reflux action to deliver a purer lighter spirit.

Nose: Light and fresh, grassy, linseed oil.

Palate: Light and delicate. Soft fruit, traces of honey, slightly nutty.

Glen Elgin Single Malt Whisky 12 year old Hidden Malts 43%


Founded in 1898 by the partnership of William Simpson and James Carle
Location: Speyside region, Lossie district, Longmorn
Water source: Springs near Millbuies Loch.
 
Distillery tasting notes supplied by Diageo

An uncommon whisky on its own as it is in demand by blenders. Positive, aromatic and a whiff of smoke.
Strength: 43% ABV
Appearance: Full gold.

Nose: Sweet. Almonds, or marzipan? Some orange juice. Perhaps a trace of sawn wood.


With water, Speyside esters, nut oil and buttery fat, prawn crackers, traces of fresh pears; a whiff of smoke or steam; dense.

Body: Smooth, medium.

Palate: Pleasant mouth-feel; sweetish, then dryish, with some acidity between, all well balanced.

Finish. Dryish, balanced finish.

Colour: Bright gold

Neat.
Nose: Sweet, spicy aromas and hints of oak. Some perfumed notes and a little smokiness.
Palate: Smoky with dry sherry notes. Green, leafy grass cuttings with a toasted oak element.

With Water
Nose: Fruit - plums, cherries and floral notes. A touch of smokiness with some new leather and hessian aromas
Palate: Oak aromas still present. Smoke with subtle fruit and perfumed flavours. Roasted malt and cereal notes.
Body: Light.
Finish: Dry - slight smokiness.
Cask Type: Refill Sherry Casks.

Glencraig Single Malt Whisky 1975 Gordon & MacPhail 40%



Glencraig Scotch whisky was distilled from the Lomond Stills that were installed at the Glenburgie distillery in 1958 to 1981.

The Glenburgie distillery was founded in 1810 (1829 by William Paul)

During 1958 two Lomond pattern stills where added. These stills, known as Glencraig, they allowed the distillery to produce two different whiskies. The Glenburgie, from the traditional pot stills and the Glencraig from the Lomond stills

Glencraig was named after Mr William Craig, production director of Ballantines at that time. He was actually one of the few men to have a single malt named after him.
Some Glencraig can still be found however it cannot be distilled again as in 1981 the Lomond Stills were replaced by a pair of conventional pot stills.

TASTING NOTE
Colour: Light amber.

Neat
Nose: Aromas to remind you of Christmas. Fruity - lemons
with marzipan aromas and mincemeat pies. Perfumed
and floral notes also present.
Palate: Smoky with oiled wood flavours and sherry notes
develop.

With Water
Nose: Sherry influence now appears, nutty notes with floral
notes also present. Rounding sweetness.
Palate: Bonfire smoke and charred wood flavours with sherry
notes and dried fruits.
Body: Clean
Finish: Rich, fruity notes - sherry.
Cask Type: Refill American Hogsheads.
Whisky Style: Rich and aromatic - to be savored with friends.
