After twenty years maturing in Bourbon barrels the laddie was coyly introduced to spicy Mourvedre wine casks from Rivesaltes on France’s Mediterranean coast.

It was a flirtation a holiday romance that was almost over before it began. The result of this dalliance is that the expected profound spirit shows the gentle nuances of alluring fruit flavours with just a hint of subtle spice aromas adding to the overall multi-layered experience and a flush to the cheeks of the laddie.

Is the ultimate dram a dream? Not for the fortunate few who discover their ideal.

Dewar Rattay aim to help them in their search by bottling every whisky in their cask collection at its natural cask strength and colour, without chill filtering.

One result of chill filtering is that in a cold temperature or introduction of ice or cold water the whisky may develop a slight haze, which will disappear at room temperature. The benefit is that the whisky will give a truer flavour, as the master distiller would want you to experience.

This unique 28 year old single malt whisky has been selected by Glengoyne’s Master Blender from there finest casks. Glengoyne uses only air dried barley so to enable all the flavours of the malt whisky to fully express themselves.

Tasting Note

This excellent Glengoyne single malt whisky combines the aromas of oranges and cedar wood on the nose with a hint of apple on the palate and a long medium sweet finish.

'Class in a glass' To create The Balvenie Portwood 21 Year Old, rare 21 Year Old Balvenie - which has been matured in traditional oak casks - is transferred to a port cask, or pipe, which has held fine port wines.

Here it is sampled every month by The Balvenie Malt Master to ensure that just the right amount of character is imparted by the port casks, enhancing and developing the single malt, whilst preserving its original characteristics.


The Balvenie Portwood 21 Year Old was awarded the trophy for 'best single malt 12 years and over' at the 2004 International Wine & Spirits competition, being described by the judges as 'class in a glass'.

Nikka's Yoichi Distillery Japanese Single Malt Whisky.


Nikka's Yoichi distillery on Hokkaido was founded by Masataka Takesuru in 1934, born into a Sake-brewing family he left Japan for Scotland in 1918 to study chemistry and whisky making at Glasgow university.
He returned in 1923 with a Scotish wife and a deep desire to create Japanese whisky on the island of Hokkaido. His employer Kotobukiya, his employer insisted that the best location for the distillery would be close to the major urban areas on Honshu so Yamazaki (Suntory) was established with Takesure in charge.


His Vision of a northern distillery on Hokkaido never left him. There was peat, oak and the island climate was similar to Scotland. In 1934 he left Yamazaki to set up his own distillery six years later the first whiskies arrived from the Yoichi distillery

Balblair 16 year old's smooth, delicate and refreshing taste attracted much interest and was awarded an esteemed Gold Medal at the prestigious 2005 San Francisco World Spirits Competition.

Known as a 'spirit of the air', Balblair Distillery's location in Edderton is key to the whisky's flavour as the area is considered to have the purest air in Scotland.

Swept across the vast expanse of the North Sea and along the Dornoch Firth by winds born in the Arctic, it is this air that gives Balblair a sharp, clean edge.

Colour: Mid amber with gold highlights.

Nose: Light, fresh spiciness with a slight nutty fragrance.

Colour: Rich orange gold

Nose: Sweet sherry with apples, raisins and sultanas. Some camphor and menthol aromas with hints of linseed oil. Spices – cloves and cinnamon

Body: Big and complex

Palate: Smoky with a rich spicy note. Oiled / polished oak. Sherry and fruitcake flavours slowly develop

Tasting Note

Colour: Straw yellow.

Neat

Nose: Citrus fruits (lemons & limes) with hint of honey and pine resin. Peaty malty notes in the background.

Palate: Smoky with cereal and malt flavours. Dries up with spicy/peppery notes followed by a delicate floral edge.

With Water

Nose: Sweet, chocolate and fudge aromas. Floral elements and a hint of phenols (germolene).

Palate: Toasted/smoky flavours initially with a subtle fragrance. Some fruity notes develop along with an earthy, vanilla edge.

Body: Rounded with a balance of flavoursFinish: Slightly sweet with a hint of smoke and malt.

Connemara 40%, Single Peated Malt Irish Whisky


Irish single malt whiskey.

Nose: Pronounced smoke rather than peat, both are evident.

Palate: Syrupy, sweet grass. Smokey some drier hints of phenol. A suggestion of juicy wood extracts osf sherry rounding out the flavours.

Finish: Smokey and emphatically grassy. Sweet grass with spicy dryness.

Comment: Lots happening. Chimney pots of smoke. I love this whisky.

Glenmorangie 1975 46% Single Highland Malt Scotch Whisky.


A very rare aged Glenmorangie single malt finished in Cote Du Rhone’s finest wine casks.

Tasting Notes

Colour Deep mahogany.

Nose. Rich and sweet with berry fruits and spices. At full strength, the aroma is of plums and dark chocolate with hints of mint, black pepper and almond oil.

With water, sugared plums emerge with peaches and hints of berry fruits (strawberries and raspberries), balanced by sandalwood and dates, with beeswax in the background.

Taste The flavour is richly fruity and full bodied. The taste starts sweet and fruity then becomes slightly tart as the berries appear with sherbert lemons. The taste then evolves into a lightly chewy and dry mouth feel as cocoa powder and dry vinous notes are detected.

Finish Long and dry with cocoa, deep vinous notes and plum skins.

Old Pulteney Highland Single malt Scotch Whisky

17 year old 40% Distillery Bottling.

Highland Region Northern District.

Established in the town of Wick, Pulteney Distilled is the most northerly distillery on mainland and at that time was only accessible by sea. The barley was brought in by sea, the Whisky shipped out by boat and many of the distillers were also employed as fishermen. Sadly the fishing industry continues to operate using the same traditional distilling methods first introduced in the 1800’s to create one of the finest Highland Malts available.

Appearance: Red amber with a rich autumnal hue.


Nose: Sweet with traces of apples and pears; slightly woody with a hint of butter-scotch.

Tasting notes: Full bodied, with hints of vanilla and floral notes in the background; a long-lasting memorable finish.

Locke's 40% Blend Irish Whiskey

The Locke's Irish Whiskey originates from Locke's Distillery in Kilbeggan, Co. Westmeath which is situated along the banks of the river Brusna in the heart of Ireland.


The Distillery has the distinction of being the oldest licensed distillery in the world dating back to 1757. This distillery prospered in the 19th century by successfully exporting its whiskey to the UK, US, Argentina, Australia and other UK colonies. The change in the economic climate brought about by the second world war eventually forced Locke's to cease operations in 1953 and sell off its assets. This loss in distilling history was ultimately Cooley Distillery's gain when it bought over Locke's Distillery and its remaining assets in the late 1980's.


Locke's Irish Whiskey is made from marrying malt and grain whiskey together. This fine whiskey is double distilled in traditional pot stills and patent stills and uses only the finest malted barley, maize and the purest Irish spring water. Maturation of Locke's Irish Whiskey takes place in the 200 year old warehouses in Kilbeggan. A blend of malt and grain whiskey that has been gently mature in oak casks is used to create the distinct flavour and character that is unique to Locke's Irish Whiskey.

Nose: Sweet and malty

Taste: Sweet and smooth at first. Possessing a full malty and spicey middle and a delightful honeyed sweetness which rolls around the palate, filling the mouth. It glides over the taste-buds like the smoothest of silks. Well balanced overtones of oak wood.

Finish: The powerful maltiness trickles off leaving the grain which is first noticeable as the conveyor of ex-bourbon cask vanillins. Soft, clean and quite malty with a little oloroso sherry wood.

AH Hirsch Reserve 16 year old 45.8% Straight Bourbon Whiskey


This extraordinary bourbon has had a long dramatic journey from its inception to here. In fact, the history behind A H Hirsch Reserve speaks volumes about why it is not only the finest American Bourbon ever made, but indeed a national artefact.
The sublime, amber coloured whiskey in this bottle was distilled in 1974 in the small copper pot stills of Mitcher’s Distillery. Nestled in the heart of Pennsylvania, the distillery originated in the mid 1700’s when Kentucky was just a twinkle in Daniel Boone’s eye. It is quite justifiably listed as a National historic Landmark.
The combination of an arduous distilling process, an unusual recipe including rye and 16 years of peaceful slumber in the wood are partly why Hirsch Reserve is such a magnificent spirit. The rest must be put down to the sheer force of history and perhaps a touch of magic.
In 1989, the last remaining barrels were brought to Kentucky for final aging and bottling - this whiskey was awarded America’s first 5 star rating, simply stated there is no other bourbon on any shelf that compares with its bouquet, flavour, depth and overall complexity.

Lustrous, rich medium-amber/ sunset orange with copper/russet highlights:
The tight compact nose has sensuous fragrances of spiced orange, walnut, corn husk, a touch of resin and most prominently nougat – while its anything but expansive, the bouquet subtly draws me in, forcing me to inhale deeper- in the process, the layers of aroma unwrap like the delicate skins of an onion – it’s a seductive and coy bourbon nose:
In the mouth this robust but polite bourbon confidently offers happily married tastes of caramel, oats, toffee, wood smoke, maple syrup, oak, controlled alcohol and raisins:
There is even a slim winey trace of sweet sherry in the sublime, firm heady aftertaste:
Clearly a superlative bourbon that stands head and shoulders above the pack.

A Range of 3 vatted malt Scotch Whiskies.

Starting with an Idea on a hillside followed by a spirited conversation one night David “Robbo” a “master” distiller and the brothers Jon and Mark both “master” whisky lovers agreed that their world needed a whisky that tasted exactly the way the liked and cut out all the waffle that always seemed to go along with whisky.
Sourcing whisky from his work, Robbo created tastes he knew Jon and Mark would like. After several attempts with bottles and tasting notes being sent between them in Scotland and Bristol they agreed on 3 flavours.Rich Spicy, Smokey Peaty, and Smooth Sweeter One.

Balmenach 1973, 27 yr old 46%.Speyside Single Malt Whisky.

Balmenach, an illicit distillery before it was licensed in 1824; it was situated in the hilly countryside between the upper reaches of the Spey and the Avon.

Appearance: Pale gold, wet straw like colour

Nose: Nose warming, a fresh tobacco note initially fading into medium bodied oakwood, slightly sweet.

Plate: A mouth warming prickle to the tip of the tongue introduces a pronounced oakwood note that gradually blends into a glowing vanilla sweetness. Light to medium character with overtones of white wine and fresh fruit. A Pleasant after taste hints of salt air and a delightful finish.
